Sorrel, Rumex acetosa, is a perennial green with a tart, lemony flavor.  It is very hardy and has been used as a potherb in soups, salads or to line baking dishes for fish.  It is high in Vitamin C.  It can grow up to 1 -2 feet and send up a tall seed spike.  Grows well in full sun or partial shade.

I received the seed for this from a Ukrainian friend who wasn’t sure what it was called in English, but she cooks traditional foods, and this is a traditional potherb.  The seed stalks and leaves can be used for natural dyeing as well as eating, and will give a light yellow by itself, but if you add iron to that bath, you will get a nice olive/army green.
